The Monocultivars
Cavanna Olii offers a selection of Monocultivar extra virgin olive oils obtained by processing a single variety of olives rather than a mixture as generally occurs in the tradition of Extra Virgin Olive Oils.
Each cultivar has its own precise identity based on the area in which it is grown and harvested.
Monocultivar extra virgin olive oil is produced not thinking about the yield, but rather about the specific characteristics of the pressed olives, the aromas, the very high levels of polyphenols, in order to guarantee a final product with typical and recognizable characteristics, both from a chemical and organoleptic point of view: some have intense aromas and flavors, others are light and delicate; in some the spicy prevails, in others the scent of fresh fruit or grass stands out.
